Gabriel attended Mililani High School in Hawaii. As a senior in 2018, he was the Gatorade High School Player of the Year for Hawaii after passing for 3,754 yards and 38 touchdowns. He finished his career with 9,948 passing yards, and 105 touchdowns. Gabriel committed in 2018 to the University of Central Florida.
During his freshman yera he was the backup to Brandon Wimbush, but took over during the first game and started the final 12 games of the season. He ended his freshman year with 3,653 yards, 29 touchdowns, and seven interceptions. Gabriel had a strong sophomore season as well for UCF. He threw for 3,570 yards, 32 touchdowns, and only four interceptions. During his junior season at UCF he suffered a broken left clavicle, which ended his season.
On November 27,2021, Gabriel announced via social media that he would be transferring from UCF. After originally announcing that he would transfer to UCLA, he would eventually transfer to the University of Oklahoma. At Oklahoma in 2022, he continued to put up strong numbers, throwing for 3,168 yards, 25 touchdowns, and six interceptions. During his second season at Oklahoma, and fifth season overall in 2023, he had his best overall rated season. He threw for 3,660 yards, 30 touchdowns, and six interceptions.
After the season he announced he was going to transfer to Oregon and play a sixth collegiate season.
