Griffin attended Philadelphia High School in Mississippi. Over his career, he caught 140 passes for 2,399 yards with 21 touchdowns and rushed 116 times for 1,473 yards and 17 touchdowns. He earned 4-star ratings from ESPN and 247 Sports, and a 3-star rating from rivals.com. He chose to join Mississippi State over offers from Auburn, Tennessee, Ole Miss, Maryland, and Illinois. As a true freshman, he played in 9 games, making 2 starts. He hauled in 10 receptions for 61 yards and 1 touchdown. As a sophomore, he played 10 games with 6 starts. He made 26 receptions for 269 yards. His production increased again in 2022 as a junior when he played 13 games with 6 starts. He hauled in 40 receptions for 502 yards and 4 touchdowns. His senior season in 2023 was his best season yet as he appeared in 12 games making 10 starts. He totaled 50 receptions for 658 yards and 4 touchdowns.
